چکیده
During the industrial processing of agricultural or animal products, large amounts waste are produced. These wastes, generated in throughout seasons year, can be considered most abundant renewable resources on earth. Due to availability and richness components these raw materials, there is a great interest their reuse, both from an economical environmental point view. This based fact that high quantity such wastes could used as low-cost materials for production new value-added compounds, with further cost reduction. The concern derived composition, especially agro-industrial contain potentially toxic which may cause deterioration environment when uncontrolled either burned, left soil decay naturally, buried underground. Moreover, exhibit biochemical oxygen demand (BOD) chemical (COD) values give rise serious pollution problems if not properly discarded. Recycling transformation food represent opportunity supporting sustainable development by conversion into products through fermentation process.
